To save Greirat from Irithyll, you have to save Siegward from the well outside the Church before the Cathedral of the Deep by buying his armor from Patches and giving it to him. So according to the Fextralife wiki, some people believe it is possible to save Greirat from his wacky adventures in Lothric Castle.
